5 Brown Bag Lunches That Aren’t Sandwiches

2-3 days out of the week, I work longer days and have to take my lunch to work. I’ve never really liked taking sandwiches; I know that they’re easy to make but unless I’m low on groceries and/or didn’t plan, I typically like to pack a meal that’s a little more fulfilling. I love to cook but don’t like spending countless hours in the kitchen unless I’m making a “comfort” meal or it’s the holidays, which is a whole nother beast. I always try to find easy, quick recipes that I can whip up the night before that pack easy and won’t leave me feening for junk food 2 hours after lunch.

My go-to is a big salad with veggies + salmon, but sometimes I make pasta and even veggie wraps that I can eat on the go. I want to mix it up more (but still keep it healthy), so if you’re like me, here are 5 easy recipes you can make when you have to brown bag it.
