When Summer arrives, I naturally find myself gravitating towards lighter fare. Fresh fruit, smoothies and salads become staples, and lately I’ve been making this Peach Salad with Balsamic Glaze on the days I’m hungry but don’t want anything too heavy to eat.
On a recent shoot with Southern Muse, Chef and Blogger Andrea LeTard made a similar version with Burrata cheese and that’s what really got me on this kick; It’s a super simple recipe (It’s only 4 ingredients besides the seasoning and EVOO), and one that can be bulked up for larger crowds. The balsamic glaze is what really makes the recipe, so make sure you don’t leave it out!
Ingredients:
- handful of spinach
- 1 peach, sliced
- 6 oz of mozzarella cheese, sliced
- balsamic glaze
- Salt
- Pepper
- Extra Virgin Olive Oil
Directions
In a large bowl, clean/rinse spinach and transfer to plate or platter. Layer sliced peaches and mozzarella cheese on top of spinach. Drizzle lightly with EVOO, then balsamic glaze. Sprinkle salt and pepper to taste. Dassit!
This salad takes 5 minutes to make, and you can also add in sliced red onions for a bit more tang, and sliced almonds or pecans for a bit of crunch. The peaches are the star of the show, so make sure they are juicy and ripe, but also be sure to use a balsamic glaze (and NOT a vinaigrette) because you don’t want the flavor to overpower everything. You can also swap the cheese out for goat, feta, or burrata and it will still taste delicious because the flavors all work so well together. Anytime you find yourself needing a boost of fruit and veggies, throw this in the mix as a side.
